 Il est fait par une  It is a winemaking technique which has a long and consolidated
tradition in this region of Italy. The ‘ripasso’ system involves macerating Valpolicella
superior wine on the fermented skins of grapes previously used to make Amarone. When the
new Amarone has been racked off the skins, fresh Valpolicella wine is added to the same
tank and left in contact with the partially fermented pommace. It is then refined in French
wooden casks for at least one year. This process adds to the Valpolicella an incredible
amount of body, character, and style.
